Baked salmon with strawberry salsa

Ingredients

  • 2 salmon fillets (skin on)
  • olive oil
  • handful of strawberries
  • 1 red onion
  • a small handful of basil leaves
  • red wine vinegar
  • pepper and salt to taste

Preparing the baked salmon with strawberry salsa-- 5 minutes

Peel the red onion and cut it quite fine. Rinse the strawberries and remove the strawberry hull, the green part. Cut the strawberries quite fine and combine them with the red onion.

Season with pepper, salt and a little bit of red wine vinegar, you don't want to make it very moist or mushy. Chop up the basil leaves and also stir them into the salsa mixture.

Putting it together -- 10 minutes

Pat the salmon dry using paper kitchen towels and season with pepper and salt. Heat olive oil in a large skillet and bake the salmon on the skin side first. After about 3 minutes on medium-high heat, the skin will be crispy.

TURN the salmon over and also bake for about 3 minutes on the other side. If your fillets are thicker, you should cook them a little longer. Serve the salmon with strawberry salsa and perhaps you'll like our recipe for pommes duchesse!
