Peel and cut the garlic clove and shallot. Peel the parsnip and pears and remove the core from the pears. Cut the parsnip and pears into chunks. Heat olive oil in a medium-sized pan, saute the onion and garlic for about 1 minute.
Add the chopped parsnip and pear. Saute for another few minutes and then pour in the vegetable stock and bring to a boil. Turn down the heat and let it simmer for 10 to 15 minutes.
Pour the soup into the blender and blend it until it's really smooth. Pour back into the pan and bring to a boil. Taste the soup to check if it needs more vegetable stock, pepper and salt.
Divide the soup over 4 bowls and finish it off with some cream.
