How to make red curry paste

A red curry paste is even tastier when you make it yourself. Using fresh ingredients and a mortar or blender for a spiced aromatic paste.

A red curry paste can be easily bought in all kind of stores, because there are so many great ones. But making your own paste is even tastier! You can store them for a few weeks, or even longer if you freeze them in portions.

Ingredients

  • 2 chili peppers
  • 2 garlic cloves
  • 1 lemongrass stalk (or use sereh from a jar)
  • 1 tablespoon sesame oil
  • 2 tablespoons sunflower oil or use other neutral oil
  • 1 teaspoon ground coriander
  • 1 shallot or small onion
  • 1 teaspoon sugar
  • about 3 cm fresh ginger root

You can create a red curry paste with a mortar and pestle or a (small) blender.

PEEL the onion, garlic cloves and ginger root. Roughly CHOP the onion, garlic, ginger, lemongrass and chili peppers. Do not remove the seeds from the peppers, they're extra tasty.

ADD everything to the mortar and grind it as fine as you can. If you're using a blender it's best to add the oil at the beginning. Also ADD the ground coriander and sugar and mix until it's kind of smooth.

You can also freeze this curry paste in portions. Enjoy in a delicious curry dish!
