Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit. Peel the apples, remove the core and chop them into pieces. Combine the apples with about 50 grams of butter and 2 teaspoons of ground cinnamon.
Roast the apples in the oven for about 5 minutes, depending on the size of the apple pieces. The apple pieces should be soft, use an immersion blender to create a smooth apple puree.
Melt the rest of the butter. Combine eggs, honey, milk and apple puree and make sure it's a smooth mixture. Sift the flour along with the baking powder and add this to the mixture.
Make sure it's smooth again and then also add the melted butter. Refrigerate until the batter is completely cooled off.
Pre-heat the oven to 210 degrees celsius or 410 degrees fahrenheit. Grease the madeleine tin(s) and fill them for about 2/3rd with the batter. They will rise a bit, so make sure you don't use too much batter.
Bake the madeleines for about 10 minutes, or until beautiful golden brown. This recipe is enough for about 30 madeleines, so bake them in batches if you have just one tin. Enjoy!
