Open up a ripe avocado by cutting the avocado lengthwise down to the pit. Turn the avocado in your hands and gently tap it with your (chef's) knife. Turn the knife to remove the pit from the avocado.
Scoop out the flesh with a spoon and press it through a fine sieve into a small bowl. Add the lime juice; this will ensure that the ice cream retains the beautiful green colour of the avocado.
Mix in the sugar and double cream until you have a smooth mixture. If you have more avocados to use up, you can easily increase the size of this recipe; simply double the ingredients.
Pour the avocado ice cream mixture into an ice cream machine and churn for 20 minutes, or until your ice cream has formed (the time will depend on the power of your ice cream machine). You can eat the avocado soft-serve ice cream immediately, or store it in an airtight container for up to 3 months.
Don't have an ice cream maker? No problem! Place the avocado ice cream mixture in a container in the freezer. Stir it well every 10 minutes. The final ice cream will be less smooth than a churned version, but still delicious. Enjoy!
