Ingredients
- 4 bagels
- 8 smoked bacon slices
- 4 eggs
- dash of milk
- pepper and salt to taste
- mayonnaise
- fresh chives

Kitchen equipment needed
- oven
- small oven tray
- cutting board & chef’s knife
- medium-sized bowl
- whisk
- medium-sized skillet & lid
- spoon
Preparation — 10 minutes
Preheat the oven to 200 degrees Celsius or 390 degrees Fahrenheit and place the bacon on a baking tray. Place the bacon slices in the oven right away while it is still cold. This way the bacon will become extra crispy. Bake the bagels in the oven for a few minutes until the outside is crispy and the inside is warm.
Meanwhile, finely chop the chives and mix the eggs with a splash of milk and season with salt and pepper.

Finishing the bacon and egg bagel — 10 minutes
Heat a little oil or butter in a medium-sized skillet and pour in the eggs. Place a lid on the skillet and slowly cook the omelet in about 5 minutes.
Meanwhile, cut the bagel open with a bread knife and spread a thin layer of mayonnaise on the top. Divide the omelette into quarters and place on top of the bagels. Place two crispy slices of bacon on top of each bagel and sprinkle with chives. Enjoy!
