Caramelised Brussels sprouts

  • 500 grams of Brussels sprouts
  • Olive oil for frying
  • 50 grams of lardons/bacon strips
  • Honey to taste
  • 1 shallot
  • 50 grams of butter
  • Pepper to taste

Preparation – 5 minutes

If you'd like to serve this as a vegetarian dish, you can replace the bacon with finely chopped chestnut. It's still a really tasty dish, but you will need to add a little extra salt.

Trim the ends of the Brussels sprouts and remove the outer leaves. Cut the Brussels sprouts in half. Peel and slice the shallot into half moons.

Finishing the caramelised Brussels sprouts – 10 minutes

Heat olive oil in a frying pan. Place the Brussels sprouts, cut-side down, in the pan. Do not stir the Brussels sprouts at this stage! Let them brown for 2 - 3 minutes before staring them.

You can caramelise Brussels sprouts in batches if your frying pan is too small to hold them all at once. Heat the small frying pan and add the lardons/bacon strips.

Sauté the bacon strips for a few minutes, then add the shallot slices. Squeeze/pour the honey over the fried Brussels sprouts, adding just enough to coat all the Brussels sprouts.

Add the butter, then stir in the bacon and shallot. Season with pepper; you don't need to add extra salt as the bacon strips are already salty enough. Enjoy your meal!
