The type of cherry you're using defines how much sugar you need to add. Jam is mostly made with the same amount of fruit and sugar, but we've made this version with less sugar. Our cherries are quite sweet, but not very sweet. You can vary to your own taste.

Rinse the cherries and remove the stems. Remove the pits, it's best to use a cherry pitter. You can also use a small knife or wooden stick to remove them, but it takes a lot more time.
Making cherry jam add the cherries and sugar in a large pan and stir well. Let it simmer on low heat for about 45 minutes. Use a masher to create smaller pieces of cherries, depending how you'd like your jam. Test the thickness of the jam by adding a little bit to a small plate and let it cool down completely. If you'd prefer a thicker jam, you let it simmer until you've reached the desired thickness.
