Cherry pancakes

Ingredients

  • 300 ml full fat milk
  • 2 eggs
  • 300 gram self-rising flour
  • optional: 2 tablespoons custard powder or vanilla extract or a sachet of vanilla sugar
  • about 250 gram pitted cherries
  • butter for baking
  • powdered sugar for serving

Preparation -- 10 minutes

Combine eggs and milk along with custard powder or vanilla and stir with a whisk. Gradually add self-rising flour and keep whisking until you've reached a smooth batter.

You can chose to add a bit of powdered sugar to the batter or dust them after baking. Add the pitted cherries to the batter.

Finishing the cherry pancakes -- 10 minutes

Heat a bit of butter to the large skillet, make sure the butter isn't too hot. Depending on the size of the skillet you can cook 1 or 2 pancakes at the same time.

Bake the pancakes until they're beautiful golden brown on both sides. Serve immediately with some extra powdered sugar, enjoy!
