Peel and chop the onion and garlic as finely as possible. Remove the seeds from the peppers and cut them into fine dice. Wash the spring onions, slice finely, and set aside.
Heat a splash of olive oil in a frying pan and sauté the onions and garlic over a medium heat. Add the mince and cook until browned. Add the diced peppers, tomato purée and all the herbs.
Fry everything for a few minutes, then add the canned tomato and beef stock. Place a lid on the frying pan and let it simmer for 15 to 20 minutes.
Finally, add the red kidney beans and let them heat through for a few minutes. Season with more herbs, salt and pepper, to taste. Garnish the dish with spring onions. Enjoy your meal!
What is the difference between chilli and chilli con carne?
A chilli can be made with chicken, turkey, sweet potatoes, corn, beans and so on. There are an infinite number of variations.
A chilli con carne means “chilli with meat”, and is specifically made with red meat (usually minced beef).
What should I serve with chilli con carne?
Boiled rice, potatoes, or a nice crusty baguette, all make tasty side dishes. Tortilla chips also go really well with chilli con carne.
