Wash the tomatoes and halve them. Slice the mozzarella into slices and cut out heart shapes using a cookie cutter.
You can also do this by hand with a chef's knife if you don't have a heart-shaped cookie cutter at home.
Place a slice of mozzarella, then a tomato, then a basil leaf, followed by more mozzarella, more tomato, another basil leaf, until all the tomatoes and mozzarella slices are used up.
Drizzle the caprese salad with olive oil and season with salt and pepper. You can (if desired) add some balsamic vinegar, but this is not included in the traditional recipe.
It is best to serve this classic insalata caprese immediately, but you can store it in the refrigerator (covered with cling film) for up to a day. Enjoy!
