Coconut almond cookies

  • 75 gram sugar
  • 1 sachet vanilla sugar
  • 125 gram almond flour
  • 125 gram grated coconut
  • 1 teaspoon baking powder

Coconut Almond Cookies

Preparation -- 10 minutes

Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit. Use a standmixer to combine the sugar, vanilla sugar and eggs until they're fluffy.

Combine the almond flour with baking powder and grated coconut and add them gradually to the fluffy eggs. Make sure the batter is smooth and use your hands to create small bowls.

The batter is sticky so you can also use an ice cream scoop to make the cookies.

Finishing the coconut almond cookies -- 10 minutes

Divide the balls over the oven tray lined with parchment paper and bake them beautiful golden brown in about 10 minutes. Let them cool off a bit and dust them with powdered sugar. Enjoy!
