Cod and apple salad

  • 4 cod fillets
  • 3 apples
  • Juice of 1 orange
  • Small handful of capers
  • 2 large gherkins
  • 2 tablespoons mayonnaise
  • Salt and (white) pepper
  • Butter
  • Mixed salad leaves of your choice

Making the cod and apple salad 15 minutes

Thaw the cod fillets first, if necessary. Pat the cod fillets dry and add a pinch of salt and some pepper. It is important to pat the cod fillets dry to prevent the fish from being too wet after cooking.

Mix the orange juice with the mayonnaise and season with salt and pepper. Set the dressing aside. Cut the gherkins into thin slices.

Wash the apples and cut them into thin strips (julienne). Mix the lettuce, apple, gherkins and capers together in a large bowl.

Heat the medium frying pan over a medium heat. Add a generous amount of butter to the pan. Place the cod fillets in the pan and sauté for 3 - 4 minutes, depending on their thickness.

Fry the fish for a couple of minutes on both sides. Serve the cod salad drizzled with the dressing. Enjoy!
