Ingredients
- 500 gram broccoli
- 1 onion
- 3 garlic cloves
- oil
- 1 liter chicken stock (store-bought or make your own)
- 200 ml milk
- 30 gram dairy butter
- 40 gram all-purpose flour
- 100 gram grated cheese
- 150 gram smoked chicken
- pepper and salt to taste

Kitchen equipment needed
- cutting board & chef’s knife
- 2 medium-sized pans
- whisk
- immersion blender
Preparation — 10 minutes
PEEL and roughly chop the onion and garlic cloves. This doesn’t need to be beautiful, cause we’re going to blend the soup anyway. Roughly CHOP the broccoli, if you’re also using the stem you need to peel it first. SLICE the smoked chicken in thin slices and set aside.
Finishing the creamy broccoli and smoked chicken soup — 20 minutes
HEAT a bit of oil in one of the medium-sized pans and sauté the onion and garlic. ADD the broccoli and cook it a few minutes more. POUR in the chicken stock and bring to a boil. Let it cook on low heat for about 10 minutes, depending on the size of the broccoli pieces.
Meanwhile HEAT butter in the second pan and add the flour all at once to create a roux. COOK it on low heat for a few minutes, POUR in the milk and use a whisk to create a smooth mixture.
BLEND the broccoli until it’s smooth. STIR the grated cheese into the milk mixture and pour in a bit of the broccoli mixture. Keep on stirring with the whisk until all of the broccoli is added and the soup is smooth. SEASON with pepper and salt and serve with the smoked chicken. GARNISH with parsley if you like and serve with some homemade bread. Enjoy!
Hello Marco and Veronique. As I do not have a smoker and my supermarket doesn’t sell smoked chicken, could I add liquid smoke for the smoky flavor? This looks marvelous and I have all the ingredients so I want to make it for dinner tonight, but just wanted to find out about the smoky taste. Thank you.

I think it could be possible to add liquid smoke, but I’m not a 100% sure cause I’ve never tried it myself. But I am familiar with some sort of powder that gives a smokey flavor, and that would do the trick. Will you let us know how it turned out? Cause now I am curious :D
