Creamy ginger mango dessert

Ingredients

  • 1 mango
  • 200 gram curd cheese/quark (or any other type, like Greek yoghurt)
  • 2 tbsp powdered sugar
  • 1/2 cup water
  • 1/2  cup sugar
  • 1 small piece of ginger root
  • 6 plain cookies
  • Optional: mint leaves for garnish

Making the dessert -- 15 minutes

Make a simple syrup by heating the water and sugar in a small saucepan. Peel the ginger root and slice into thin strips. Cook the ginger strips in the simple syrup for about 15 minutes on medium-low heat.

Peel the mango and slice a little bit in beautiful pieces for garnish. Blend the rest of the mango using a rod mixer or blender and make sure it's really smooth by pressing it through a fine sieve.  

Mix the pureed mango with the curd cheese and add some powdered sugar to taste. Divide the mixture into 4 pretty glasses.  crumble the plain cookies and add them on top of the mango dessert.

Finish it off with the mango pieces and the sugared ginger strips. To make it even more pretty, we added mint leaves.
