Easy Egg Salad

Preparation – 10 minutes

Carefully place the eggs in a small pan and cover them with cold water. Bring the water to a boil on medium-high heat. When the water starts to boil, the time starts counting.

Seven minutes until you've boiled the perfect eggs.

Immediately chill the eggs, the easiest way to do this is using ice water or running cold water. Meanwhile finely chop the fresh chives, you'll need about one tablespoon.

Rinse and chop the celery stalk as fine as you can.

Finishing up the easy egg salad – 5 minutes

Peel the boiled eggs and transfer them to your cutting board. You can chop them with your chef's knife, or use a fork. Combine chives, celery stalk, lemon juice, eggs and mayonnaise in the medium-sized bowl.

Season with pepper and salt and serve with toast or bread. Garnish with some more chives if you prefer.

Easy Egg Salad: frequently asked questions

Do I have to use fresh eggs for this egg salad?

You don't have to use fresh eggs, but if you prefer to, keep in mind that fresh eggs are more difficult to peel. To make peeling easier, "shock" the eggs by rinsing them under cold running water and adding a handful of ice cubes. Let them sit for 5 - 10 minutes, and you'll notice that the eggs are much easier to peel!

How can I prevent my homemade egg salad from becoming watery?

It's possible that the eggs were not boiled long enough. Alternatively, you may have added a splash of vinegar to the mayonnaise, which can make the egg salad watery.

Can I make and store the egg salad in advance? How long does it stay good?

Absolutely! The most delicious egg salad is made at least one day in advance to allow all the flavors to meld. Homemade egg salad generally stays good in the refrigerator for 3-4 days, provided you store it in an airtight container.
