Cut the fennel bulb into slices which are not too thick. Heat a griddle pan over a medium-high heat and brush the fennel slices with olive oil on both sides. Griddle the fennel slices for 2 - 3 minutes on each side until visible grill lines appear.
Preheat the oven to 180 degrees Celsius. Mix the crème fraîche with an egg until smooth. Season with salt and pepper. Spread a thin layer of this mixture over each piece of puff pastry, but leave the edges clear.
Finish the fennel tartlets by sprinkling a little grated cheese on top. Do not cover too much of the fennel with the cheese.
Bake the fennel tartlets for 10 to 15 minutes, until golden brown. Serve immediately, or keep the tartlets in the fridge for up to 1 day. Enjoy!
