Fish fritters

Ingredients

  • 200 gram white fish (e.g. cod or pollock)
  • 1 large garlic clove
  • half onion
  • 3 tablespoons all-purpose flour
  • 1 small egg
  • 1 tablespoon dill (fresh or dried)
  • half lemon (zest)
  • pepper and salt to taste
  • sunflower or other neutral oil

Preparation -- 10 minutes

Peel and coarsely chop the garlic and half onion. Add it to the food processor along with the fish and blend it. Transfer the mixture to a bowl and add dill and the zest of half a lemon.

Add a small egg and about 3 tablespoons flour, you can add some more flour if the mixture is very sticky. Don't add too much flour otherwise the fritters will be too dry.

Season the mixture with pepper and salt.

Finishing the fish fritters -- 10 minutes

Heat a large dash of oil in a skillet. Add a spoonful of the mixture and press it a bit flat to create fish cookies. Cook on both sides until they're beautiful golden brown and serve immediately.

Extra amazing when served with a tartar sauce, enjoy!
