  • 300 ml cream
  • 200 ml milk
  • 100 gram sugar
  • 3 egg yolks
  • 3 tablespoons green tea (depending on the type your using)

Preparation -- 10 minutes

Coat a small cake tin or oven dish with sunflower or other neutral oil and line it with parchment paper. Combine cream, milk and green tea in a medium-sized pan.

Let it simmer on low heat, this way the cream and milk can absorb the flavour of green tea.

Finishing the French green tea parfait -- 15 minutes + waiting time

Meanwhile beat the egg yolks and sugar with your standmixer until it's pale and fluffy. Sieve the cream and milk to get rid of the green tea. Slowly pour it into the beaten egg yolks and keep on mixing to prevent it from creating lumps.

Pour the mixture back into the pan and let it simmer on low heat. Keep on stirring with a silicone spatula to prevent it from burning. Use your finger to create a line on the spatula, if it stays visible, the mixture is done.

Let it cool off shortly before your pour it into the prepared cake tin or oven dish. Freeze for about 3 hours, or until it's completely frozen.

The best way to serve is using a warm knife to divide it into slices. Enjoy!
