Divide the cauliflower into florets and set aside. Peel and finely chop the onion and garlic cloves. Peel and finely grate the ginger root. Remove the seeds of the red or green chili if you like a milder version and chop the chili into pieces.
Remove the seeds of the green bell pepper, rinse it and chop into small cubes. Heat oil for frying in the dutch oven to about 180 degrees celsius or 350 degrees fahrenheit.
Create a batter by combining flour, cornstarch, chili powder, pepper and salt. Add a bit of water until you've create a runny batter.
If you're using green onion for garnish, you can also divide it into rings and set aside.
Coat a part of the cauliflower florets with batter and fry them until they're beautiful golden brown. Repeat until all the cauliflower is fried. Heat oil in a large skillet and sauté the onion and garlic for a few minutes.
Then also add the bell pepper cubes along with grated ginger and red or green chili. After another few minutes you can also add the chili powder, chili sauce, vinegar, sugar, soy sauce and water.
Season with pepper and salt and add the crispy fried cauliflower. Make sure the cauliflower is completely coated, garnish with green onion and enjoy!
