Start preparation by dicing the bell peppers, tomato and eggplant. Drain liquid from the can of corn and red kidney beans. Wash and slice the spring onion, the same goes for the red pepper.
If you like more heat, leave the seeds, otherwise, remove them. That's all there is for preparing your ground beef tacos.
Add olive oil to the large skillet, bake the minced beef until browned. Add red pepper, chopped spring onions, diced tomato, bell peppers and eggplant. Bake for 10 minutes while stirring.
Add in cumin seed and oregano to taste. Lastly, add in the (drained) corn and red kidney beans. While heating up, heat up the tortilla shells. Season with salt and pepper.
