Ingredients
- 250 gram all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 50 ml olive oil
- 120 ml full fat milk on room temperature

Kitchen equipment needed
- standmixer or knead the dough by hand
- cling film or kitchen towel
- rolling-pin
- large skillet
Preparation — 10 minutes
Combine flour with salt and baking soda. You can knead the dough by hand or use a standmixer.
Add olive oil and then gradually pour in the lukewarm milk until you’ve reached a dough ball. Cover the dough ball with cling film or a kitchen towel and let it rest a short while.

Finishing the homemade piadina — 20 minutes
Knead the dough again and divide into 4 equal pieces. Dust your work surface and rolling-pin with flour and roll out each piece of dough into a thin sheet. It’s best to roll it quite flat and thin.
Bake the flatbread in a large dry skillet (without oil or butter!) until both sides or beautiful golden brown. Repeat for the remaining 3 flatbreads. Serve them for example with ham, mozzarella and tomatoes. Enjoy!
