Ingredients
- 1 bottle blanquette de limoux or any other kind of prosecco (750cc)
- 1 lemon
- 88 ml Cointreau (that’s about 2 shot glasses)
- Apple cider

Kitchen equipment needed
- Small sieve
- Measuring cup (1L)
- Champagne glasses
- Citrus juicer
- Small bowl
- Small knife
Preparation — 5 minutes
SLICE the lemon in two and squeeze out the juice from half of the lemon. The other half will be used for garnish later on. We prefer to use a glass juicer for the task. But there are a lot of other ways to get the most juice out of lemons or limes. For example roll them on your work surface, cut in half and squeeze the juice out with your hand. SIEVE the lemon juice.

Mixing the Jack Cools cocktail — 5 minutes
GRAB a measuring cup and add 2 tablespoons of lemon juice. ADD 2 shot glasses filled with Cointreau and the bottle of prosecco. Now fill the measuring cup with apple cider until you’ve reached 1 liter total.
SERVE this Jack Cools cocktail immediately and if you prefer add some extra ice cubes. Garnish with lemon slices. Enjoy your cocktail!
Now if only you could scale it down to a single drink.
But then you still have two opened bottles (cider and prosecco), so even if you’re alone, you have to drink it anyway hehe ;)
