Finely grate the lemon zest into a small bowl. Mix the sugar, butter and lemon zest together well. Add a small amount of water to a small saucepan and bring to a boil.
Place the bowl on top of the small saucepan to create a bain-marie. This will ensure that the butter, sugar, and lemon form a smooth mixture.
Squeeze the juice from both lemons and slowly stir it into the butter mixture. Do not stir too quickly, as you don't want to aerate the lemon curd and make it fluffy.
Add the eggs, 1 by 1, and keep stirring until the lemon curd has reached your desired thickness. This can take up to 15 minutes, so keep stirring gently with a whisk until it is done.
Remove the mixture from the heat, pour it into a (sterile) jar and let it cool completely. You can store the lemon curd in the refrigerator for up to 3 weeks. Enjoy your lemon curd with scones, or use it in a dessert, pudding, cake, tart, mousse or parfait. Why not try our lemon curd mousse recipe?
