Combine quark with the egg, salt and the juice and zest of the lemon and whisk until it's smooth. In the bowl of your standmixer, combine flour, sugar and yeast.
Knead the dough until you've reached a nice dough ball and cover with a clean kitchen towel. Let the dough rise on a warm spot for an hour, or until doubled in size.
Pre-heat the oven to 175 degrees celsius or 350 degrees fahrenheit. Coat the small cake tin with butter and place the dough ball into the cake tin to let it rise one last time until the oven is ready.
Bake the quark bread for about 30 minutes, or until beautiful golden brown. You can check if it's ready, by tapping the bread. If the bread sounds hollow, it's ready.
This bread combines very well with a fruity jam, such as our homemade strawberry jam. Enjoy!
