Finely chop the garlic clove and make sure the pork belly is one beautiful piece by cutting it the size you like. Prepare the marinade by combining the soy sauce, peanut butter, honey, sambal, rice wine, the chopped garlic, sesame oil, caster sugar and season with pepper.
Mix well using a whisk until you've reached a smooth marinade. Rub the pork belly with your hands until fully coated with the marinade. Let the pork belly marinate for at least 4 hours, preferable overnight.
Pre-heat the oven to 150 degrees celsius or 300 degrees fahrenheit. place the marinated pork belly in the oven for about 1 hour. tip: if you have a barbecue with a lid on, you can also cook the pork belly on low heat on your barbecue so it will slowly be cooked until tender.
After an hour, heat the barbecue to medium-high heat. Place the meat onto the rack, somewhat in the middle of the barbecue so it won't burn. Cook on each side for about 5 minutes, or until seared and crispy.
Serve with corn or the cute corn cobs from the picture. so delicious!
