Preparation – 30 minutes

Pommes duchesse is a classic French dish, originally called "pommes de terre duchesse".

Start by peeling the potatoes and cutting them into large chunks, using the chef's knife and chopping board.

Fill a saucepan with water and bring to a boil. Boil the potatoes in the pan of boiling water for 20 minutes.

Make a purée from the boiled potatoes; a quick way to do this without getting any lumps is to press the potatoes through a fine sieve using a large ladle or spoon.

Mix the butter and egg yolk through the mashed potatoes. Stir well and season with salt, pepper and nutmeg. Spoon the purée into a piping bag.

Finishing the pommes duchesse – 15 minutes

Line a baking tray with baking parchment. Pipe rosettes of the mashed potatoes onto the baking tray, then bake the pommes duchesse in an oven preheated to 200 degrees Celsius for 10 to 15 minutes.
