Ingredients
- 6 prickly pears
- about 100 ml vodka
- sparkling water

- fine sieve
- champagne glasses
Preparation — 10 minutes
It’s already in the name, but it’s true, prickly pears, also known as cactus figs or cactus fruit, are cactus like so you have to be careful when you handle them. Otherwise this fruit will ‘prick’ you in your hands and that’s gonna itch! Use a glove for peeling the prickly pears.
CUT off the edges on both sides and then make one cut lengthwise. Now you can easily peel the cactus fig.
Use a blender to create prickly pear juice. STRAIN the juice, that’s necessary because this fruit contains a lot of hard pits.

Making a prickly pear cocktail — 5 minutes
POUR the juice into the glasses, about a thick bottom per glass. Then POUR the vodka into the glasses, about the same as the juice. Then finish it off by gently pouring in the sparkling water.

Hi – I’ve seen lots of prickly pears growing round us, and didn’t know if they were edible, or what to do with them – I have never tasted them. I will have to give this a try, and maybe invent a kid friendly one too! Thanks!
