Cut the butter into cubes and knead it together with flour, sugar, salt and a tablespoon of lemon juice. You can knead it by hand or use a standmixer.
Gradually add the cold water until you can form a dough ball. Wrap with cling film and refrigerate for about 45 minutes. Meanwhile coat the pie dish with butter.
If you're using whole cardamom pods, you need to grind the seeds along with the cloves with a mortar and pestle. Combine with cinnamon, pepper and nutmeg.
Peel the apples, remove the core and chop the apples into small pieces. Combine the apples with the spices, lemon zest and juice and 3 tablespoons of sugar.
Pre-heat the oven to 180 degrees celsius or 350 degrees fahrenheit. Divide the dough ball into 2 equal parts and use a rolling-pin to roll out one of them. Transfer to the pie dish and use a fork to create a few small holes in the bottom.
Divide a small layer of bread crumbs on the bottom to prevent it from getting soggy. Divide the apple mixture over the bottom and roll out the second part of the dough.
Make a whole in the middle, this can be in any shape you like. Transfer the second layer of dough on top of the filling and close the edges.
Coat the top with a beaten egg and dust with sugar. Bake the pie beautiful golden brown in about half an hour. Enjoy!
