- 1 cucumber
- 12 mini mozzarella balls
- handful of basil leaves
- 12 cherry tomatoes
- splash of balsamic vinegar
- olive oil
- pepper and salt to taste

Preparing the spiral cucumber mini mozzarella salad — 5 minutes
SPIRALIZE the cucumber using your spiralizer. If you don’t have one, just cut the cucumber in cubes or small pieces. Place a handful of basil leaves in the foodprocessor or blender and add some olive oil. BLEND until smooth and season with pepper, salt and a little bit of balsamic vinegar to create a simple but delicious dressing.
Putting it together — 5 minutes
CUT the tomatoes in halves and drain the mini mozzarella. DIVIDE the cucumber over 2 plates. Finish it off with the tomatoes, mozzarella and basil dressing.
You can also add pine nuts, extra basil leaves for garnish or even black or green olives. We decided to keep it simple, cause that’s already very delicious! Hope you will enjoy this salad as much as we did!
