Stroganoff sauce

Ingredients

  • 1 medium onion
  • 2 cloves of garlic
  • 1 red pepper
  • 1/2 green pepper
  • 2 large mushrooms
  • 20 ml vodka
  • 2 cm fresh ginger
  • 2 tablespoons tomato purée
  • 1 teaspoon ground paprika
  • 100 ml cream
  • Salt and pepper to taste
  • Olive oil

Preparation 10 minutes

Peel the onions and chop them coarsely. Remove the seeds from the red and green peppers and cut into dice. Chop the mushrooms into small dice, too, the same size as the peppers.

Peel the ginger and grate it finely.

Finishing the stroganoff sauce – 15 minutes

Heat some olive oil in a frying pan and sauté the onions and garlic for a minute. Add the peppers and mushrooms. Sauté for 3 - 4 minutes over a medium heat.

Add the tomato purée and smoked paprika and cook for a few minutes. Deglaze with vodka; it doesn't matter what type of vodka you use.

Lower the heat, place a lid on the pan and let the stroganoff sauce simmer for a few minutes. If the peppers are not fully cooked, add a little water and sauté for a few minutes more.

Add the cream and season the stroganoff sauce with salt and pepper. This sauce is delicious in combination with pork, beef or, a schnitzel/escalope. Enjoy!
