Ingredients
- 3 ripe bananas
- 300 gram all-purpose flour
- 10 gram salt
- 5 gram baking soda
- 10 gram baking powder
- 3 eggs
- 100 ml sunflower oil
- 1 apple
- 100 ml honey
- 100 gram walnuts
- 1 teaspoon ground cinnamon
- 1 apple
- butter for greasing

Kitchen equipment needed
- Rectangle cake tin
- medium-sized bowl
- large bowl
- wooden spoon
- oven
- silicone kitchen brush
- vegetable peeler
- cutting board & chef’s knife
- wooden skewer
- cooling rack

Making the batter — 10 minutes
START by creating a mix of both the wet and dry ingredients. SLICE the apple brunoise, this basically means that you’ll make small cubes out of it.
PRE-HEAT your oven to a temperature of 175 degrees celsius, or 375 degrees fahrenheit. Mix the wet ingredients together: honey, sunflower (or vegetable) oil, eggs and mashed bananas. You can mix these ingredients in a small bowl, or by using your stand mixer if you prefer.
When finished, mix the dry ingredients together. The dry ingredients are: flour, cinnamon, salt, baking powder, baking soda and crushed walnuts. Mix these in a different bowl. Keep on mixing the ingredients together, while you add the dry ingredients into the bowl of the wet ingredients. Lastly, add in the brunoise –cut apple and mix it trough the batter.

Baking the sugar-free banana bread — 1 hour and 5 minutes
GREASE the entire inside of your rectangular shaped cake tin, then add in all of the banana bread batter. If you prefer a less high bread, you can divide the batter over two cake tins. When your oven has reached its correct temperature, bake the banana bread(s) in about one hour nicely brown. You can see if the banana bread is ready by poking it with a wooden skewer. If the skewer comes out clean(ish), it’s done! Remove from the oven, transfer to a cooling rack. Let cool off to room temperature before slicing and/or serving it.
