Sweet and sour pasta salad

  • 1 large cucumber
  • 10 cherry tomatoes
  • 2 tablespoons red wine vinegar
  • 4 tablespoons of olive oil
  • 1 orange
  • 1/2 teaspoon garlic powder
  • 200 grams of spaghetti
  • Chilli flakes, to taste (1 teaspoon of chilli flakes is used in this recipe)
  • Salt and pepper to taste

Preparation – 10 minutes

Fill a medium saucepan with water and bring to a boil. Add a pinch of salt and cook the spaghetti until al dente.

Drain the spaghetti through a colander and cool under cold running water. Put the spaghetti in a large bowl.

Finishing the sweet and sour pasta salad – 10 minutes

The most impressive effect is achieved by passing the cucumber through a spiralizer. We don't have one (yet), so we cut the cucumber into thin strips using a chef's knife and chopping board.

Add the long strips of cucumber to the bowl of spaghetti. Cut the cherry tomatoes into wedges and add them to the bowl. Squeeze the juice from the orange over the spaghetti salad.

Add the remaining ingredients to the salad and mix everything well. You can serve this sweet and sour pasta salad immediately, or store it (covered) in the refrigerator for up to 2 days. Enjoy!
