Peel the onion and clove of garlic and cut into small chunks. Heat up the small saucepan without adding in butter or oil on medium-high heat. SautÉ the garlic and onion until glazed.
Add tomato paste along with the paprika powder, cayenne pepper, chili and cumin. Cook for a few minutes, this is very important to de-acid before adding moisture.
Add sugar and vinegar, bring to a boil. Turn down the heat and let simmer for a few minutes, or until the onion and garlic has softened up. Season with salt and pepper.
