Cut the sun-dried tomatoes into thin slices. Add a handful of spinach leaves, some fresh parsley and plenty of olive oil to a blender and purée until smooth.
This makes a very tasty, yet simple, herb oil.
Fill a large saucepan with salted water and bring to a boil. Add the tortellini and cook until done; check the packaging to know how long the pasta will take to cook. Meanwhile, make the sauce.
Heat a large frying pan over a medium heat and fry the bacon strips until crispy. Add the cream and the sliced sun-dried tomatoes. Stir well, and season with salt and pepper.
Drain the pasta and toss it through the sauce. Serve the tortellini on a deep plate and drizzle with the herb oil. Enjoy your meal!
