Easy vegetarian quiche

Ingredients

  • 1 packet of puff pastry
  • 1 leek
  • 150 grams can of sweetcorn
  • 1 green pepper
  • 100 grams of diced vegetarian “ham”
  • 5 eggs
  • 150 grams of Boursin cheese
  • Salt and pepper to taste
  • Olive oil

Easy Vegetarian Quiche

Preparation 10 minutes

Remove the puff pastry from the freezer and let it thaw. Wash the leek and green pepper and cut into small pieces. Drain the can of sweetcorn.

Heat a dash of olive oil in a pan over a medium heat. Fry the vegetarian ham cubes until golden brown. Add the leek and pepper pieces, and sauté for 2 minutes.

Lower the heat and add the sweetcorn. Stir everything well and season with salt and pepper, to taste. Turn off the heat after a few minutes. Add the boursin cheese to a large bowl, along with 4 eggs. Mix until well combined and creamy.

Finishing the easy vegetarian quiche 30 to 45 minutes

Preheat the oven to 200 degrees celsius. Dust the spring form cake tin with flour and line with the puff pastry. Make sure no holes are visible.

Slowly add the filling to the pastry case. Fold the upright puff pastry edges inwards. You can decorate the vegetarian quiche with any remaining puff pastry, if you wish. Beat the 5th egg, and brush the top of the puff pastry with it.

Bake the quiche for 30 to 45 minutes. Enjoy your meal!
