Soak the dried apricots in boiling water for 1 to 2 hours. Drain the apricots and set aside. Squeeze the juice from 4 oranges. Finely chop the hazelnuts or almonds.
Pour the freshly squeezed orange juice into a small saucepan and place over a low heat. Add the star anise, honey and a cinnamon stick. Bring the orange juice to a boil, stirring until the honey has dissolved (adding more honey, if desired).
Reduce the heat and and let the syrup simmer for around 5 minutes. Let the syrup cool slightly, then flavour the mascarpone with about half of it. Warm the rehydrated apricots in the remaining syrup.
Cut the mango into strips or dice (whatever you prefer). Take your serving plates and repeat the following step for each plate: distribute a little mango, 4 warm apricots, some of the flavoured mascarpone and some chopped hazelnuts or almonds on each plate. Finally, finely chop the mint leaves and use to garnish. Enjoy!
