Finely cut the onion and garlic clove. Use a mushroom brush or paper kitchen towel to clean the mushrooms and cut them into thin slices. Slice the wild boar meat into chunks.
Peel the carrots and slice them into pieces, not too thin.
You can use a dutch oven to cook the stew, but we decided to cook this particular stew in our crockpot. Add in the wild boar, red wine, game stock, chopped onion, garlic, carrots and chestnut mushrooms to a slow cooker.
Now add in the herbs: rosemary, sage, thyme, juniper berries, pepper and salt. Set the crockpot for 3,5 hours and wait until the meat is juicy, tender and filled with deliciousness.
Serve with a green salad of your choice, fries or mashed potatoes.
