Chop the shallot and garlic cloves into fine pieces and open the cans of diced tomatoes. Prepare half a litre of vegetable stock, which you can make with stock cubes.

Finishing the tomato and basil soup – 15 minutes

Add a dash of olive oil to a large saucepan and sauté the garlic and shallot until translucent. Add the chopped tomato and the vegetable stock. Bring to a boil, simmer for 5 minutes, then add the basil leaves.

Purée into a smooth soup using a stick blender. Season with salt and pepper. Serve the soup with a toasted baguette, if you like. Enjoy your meal!

Question for you - do you use the hand blender right in the skillet? or do you transfer to a bowl first? I'm just worried about damaging my pan or spraying hot soup all over my kitchen. ;-)

Hi James, I use it in the pan. No need to create extra dishes, cause it wouldn't damage your pan/skillet. Make sure to fully submerge the blender into the soup, do not retract otherwise it will splash!
