Very pretty side dish. I just pureed some beets today for colouring pasta and am inspired to give it a try. Whether it actually happens is anyone's guess. I need to go shopping for a bottle of white wine and some stock first. :)

Thanks! Oh yes coloring pasta with red beets is great, we do that sometimes too. Haha, if you decide to make the risotto one day, we hope you like it ;)

Made it tonight! It was a wonderful dish, the cumin gave it that right hint of earthiness to complement the beets. I read the instructions wrong and ended up blending the parsley and basil with the beets but that didn’t change the dish at all in my opinion. I also garnished with some crumbled goat cheese for extra creaminess! Will definitely make it again.
