One of the most well-known pies from the south of the Netherlands: Dutch apricot pie. The diamond-shaped top is very authentic.
Lattice pies are pretty regardless of what's inside. I've never seen the form you used to cut out the top but I've used strips for my cherry pies. I'd like to try an apricot version one day. :)
