Ingredients
- 1 cucumber
- 50 ml vinegar
- 1/2 red onion
- 1 teaspoon ground ginger
- 2 tablespoons brown caster sugar
- 1 tablespoon sambal oelek
- pepper and salt to taste

- cutting board & chef’s knife
- spoon or melon baller
- medium-sized bowl
Preparation — 5 minutes
PEEL the red onion and finely chop half of the onion. Check here how to easily cut onions. RINSE the cucumber with cold running water, slice the cucumber in half lengthwise and use a spoon or melon baller to remove the seeds. If you keep the seeds, the salad will be more watery so that’s why we like it better without. CHOP the rest of the cucumber into cubes.

Finishing up the spicy cucumber salad — 15 minutes
COMBINE cucumber cubes, chopped red onion, ground ginger, vinegar, sambal and caster sugar. Let it marinate for at least 15 minutes and season with pepper and salt. Enjoy, for example with satay skewers, nasi goreng or babi panggang and serve with plain rice or noodles.
