Wash and peel the potatoes, then cut them into wedges. Wash the leeks and slice into rings. Dice the onion and garlic as finely as possible and set them aside.
Heat a dash of sunflower oil or olive oil in a large saucepan and sauté the garlic, onion and orange peel for a minute. Add the potato wedges along with the sliced leek and cook for a few more minutes.
Pour the beef stock, along with the whole milk, into the pan and bring to a gentle boil. Remove the orange peel from the pan once the potatoes are cooked through.
You can check whether the potatoes are done by pricking them with a fork. If the fork go in easily, then the potatoes are done.
Blend the contents of the pan to a smooth purée using a stick blender. Purée the soup until it has become nice and smooth.
Add parmesan cheese to taste and season with salt and pepper. Enjoy your meal!

Yes, you can easily make this potato soup vegetarian. Replace the beef or chicken stock with vegetable stock, and use a vegetarian substitute for the Parmesan cheese.
Why isn't Parmesan cheese suitable for vegetarians?
Traditional Parmesan cheese is made using animal rennet, extracted from the stomach lining of calves. Vegetarian-friendly Parmesan-style hard cheeses are available which taste very similar to genuine Parmesan. They can be used in this recipe.
