Pre-heat the oven to 160 degrees celsius or 320 degrees fahrenheit. Place the ramekins in a large oven dish. Heat milk in a medium-sized pan.
Chop the chocolate bar into smaller pieces and stir them into the warm milk. Let it simmer for a few minutes and stir with a whisk until you've reached a smooth sort of 'chocolate milk'.
Combine eggs with 2 sachets of vanilla sugar, pinch of salt and 75 gram sugar. Gradually add the warm chocolate milk to the eggs and divide the mixture over 8 ramekins.
Fill the oven dish with a layer of water to create a bain-marie. Bake the flans in the oven for about 30 minutes, depending on your oven. Let the flans cool off completely before serving, enjoy!
