Curried green beans with cashews

Ingredients

  • 500 gram green beans
  • olive oil
  • 50 ml water
  • 1 red onion
  • 2 tablespoons curry powder
  • large handful of cashew nuts
  • pepper and salt to taste
  • small handful grated goat's cheese

Preparation -- 10 minutes

Remove the ends of the green beans. Peel the red onion and slice into thin (half) rings.

Finishing the curried green beans with cashews -- 10 minutes

Place the wok onto high heat and when it starts to smoke, add some olive oil. Stir-fry the beans for a few minutes. Pour in the water, this way the beans will cook without pre-cooking them first so it's a single pan dish.

As soon as the water has evaporated, add the red onion and cook a few minutes more. Add the curry powder and cashews, season with pepper and salt. Finish the dish with some grated goat's cheese. Enjoy!
