Ingredients
- 3 piadina breads (Italian flat bread)
- 2 mozzarella
- 6 slices of cured ham (e.g. Parma ham)
- 4 tablespoons green pesto
- handful of cherry tomatoes
- rocket salad
- olive oil
- freshly grated pepper

Kitchen equipment needed
- large skillet
- cutting board & chef’s knife
- (butter) knife
- salad spinner
Preparation — 10 minutes
Rinse the rocket salad and remove any excess water with a salad spinner. Divide the mozzarella into slices, not too thick. Rinse the cherry tomatoes and divide them into quarters.

Finishing the piadina with ham and mozzarella — 10 minutes
Heat a skillet on medium-high heat and add a piadina in the dry skillet (without butter or oil!). Cook them on both sides for about 2 minutes. Turn the heat to the lowest setting and add mozzarella slices on one side of the bread (as pictured above). Add 2 slices of ham on top of the mozzarella and also add a handful of rocket salad and a few quarters of cherry tomatoes.

Drizzle with a bit of olive oil and freshly ground pepper. Coat one side with a thin layer of pesto and close the piadina. Cook a few minutes on both sides and repeat with the 2nd and 3rd piadina. Serve this lovely classic flatbread with some more rocket salad and cherry tomatoes. Enjoy!
