This recipe couldn't be easier! These cucumber ribbons are delicious as a side dish. Wash the cucumbers and cut into thin ribbons using a mandoline or a chef's knife and chopping board.
You can cut the cucumbers into any shape you want. Place the cucumber ribbons in a bowl. Repeat this step for the second cucumber.
Heat the vinegar in a small saucepan and add the sugar, salt and pepper. Bring to a boil and simmer for 2 minutes, or until the sugar has dissolved. Pour the hot vinegar mixture over the cucumber ribbons.
This helps the cucumber easily absorb the vinegar.
