Remove the leaves of the red beets and use a clean sponge or brush to rinse them well. Pre-heat the oven to 200 degrees Celsius.
Transfer the rinsed beets on a piece of tin foil, make sure the size of the beets are equal. If you have some small beets, they will need less time than larger beets.
You can also roast the beets in the charcoal of your barbecue. Create closed packages of the tin foil. Don't overcrowd the packages, otherwise they won't close properly.
Transfer the closed packages to an oven tray and place them in the oven.
The exact time depends on the size of the beet, check if they're soft enough after about 45 minutes. Be careful if you open the packages, the steam is very hot.
Let the beets cool off completely, you can easily peel them by removing the ends with a small knife and then hold them under running cold water. You can now easily remove the peel with your finger.
These roasted red beets are delicious in a salad, or very simple with just some vinegar, pepper, salt and a finely chopped onion. You can also pickle them to store them for up to a year. Enjoy!
