The apple gives this sauerkraut mash a lovely crunchy texture, but you can skip it if you prefer. A mash made only with sweet potato will be too soft and mushy, so it's better to also add some regular potatoes to make the mash firmer.

Peel the floury potatoes and cut them into large pieces. Place the potatoes in a large pot and fill with enough water and a generous pinch of salt.
Bring to a boil, and in the meantime, peel and finely chop the onions.
Peel the sweet potatoes and after about 10 minutes, add them to the pot with the regular potatoes. Don’t add them at the beginning, since they cook faster.
Drain the sauerkraut and add it to the pot when the potatoes are almost done. If you add the sauerkraut at the beginning, it will get overcooked. Warm the smoked sausages in the pot as well.
Fry the bacon bits in a medium-sized frying pan until they are crispy. Add the chopped onions and cook until they become soft and translucent.
Wash the apples, remove the core, and cut them into small cubes.
Drain the potatoes and sauerkraut and use a potato masher to mash them roughly. Make the mash creamy with a knob of butter and a splash of milk.
Add the bacon bits and apple cubes, and season with salt and pepper. Be careful with the salt since the bacon is already salty.
Serve the sauerkraut mash with smoked sausage and mustard. Enjoy your meal!
