Making your own gyros spice mix is easy and so much tastier than store-bought spice mixes. An extra positive thing is creating them exactly to your own taste and they're less salty.
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon dried parsley
- large pinch of (black) pepper
- 1/2 teaspoon ground cinnamon
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika powder
- 1 teaspoon ground coriander
- 1 teaspoon ground chili
- 1 teaspoon salt
All you have to do is combine all these spices and you're homemade spice mix is ready. If you're using whole versions of some of these spices, you'll need to grind them first. You can use any kind of mortar and pestle to do this. You can store this spicemix in an airthight container up to a few months.

Most grocery stores sell seasoning mixes, so if you have limited time that’s your best option. But if you have time and want to get the perfect blend, our favorite is Tony Chachere’s original creole seasoning with a few extra ingredients like oregano and thyme to taste.
